Step by Step Method
Step 1
Bring a large saucepan of water to a boil; add salt and pasta and cook according to the package instructions.
Step 2
Drain pasta, reserving 1 cup of the cooking water.
Step 3
Heat a large skillet over medium heat and add the oil.
Step 4
Add the sausage and cook for 2-3 minutes, breaking it up with the back of a spoon.
Step 5
Sprinkle 1/2 teaspoon of the red pepper flakes over the sausage and press them into the meat.
Step 6
Add the onion and cook for 2 minutes more, or until the onion softens.
Step 7
Add the kale and reduce the heat to low.
Step 8
Cook for 2 minutes more, stirring often, until the kale is tender.
Step 9
Add the cream and scrape up any bits of sausage clinging to the inside bottom of the pan.
Step 10
Add the linguine and half of the cheese and toss well.
Step 11
Add 1/2 of the reserved pasta water and toss again, adding more if the mixture is too dry.
Step 12
Divide the pasta among 4 plates or bowls and garnish with the remaining 1/2 teaspoon of red pepper flakes and the cheese.
