"I love meatloaf, and was looking for a new way to make it... I experimented until I came up with this one, and boy, was I glad I did... Thought I would share it with all of you, it was so good!"

Step by Step Method

Step 1

Preheat oven to 300 degrees F.

Step 2

Combine the first 7 ingredients together. Mix well.

Step 3

Add ground beef, and mix well.

Step 4

In a 9x13 inch baking pan, shape meat into a loaf about 1" high x 8" long x 6" wide.

Step 5

Top with the 6 tablespoons Mexican cheese down the middle of the loaf.

Step 6

Bring up both sides of the meatloaf to cover the cheese, and then press down to cover cheese. Carefully reshape into a loaf again.

Step 7

Put in the oven, and bake for 40-45 minutes.

Step 8

Meanwhile, combine ketchup, reserved 2 tablespoons jalepanos, reserved onions, and garlic powder in a small plastic dish.

Step 9

Put in microwave on high heat for 2 minutes, or until thoroughly heated.

Step 10

Spoon sauce over cooked loaves, and sprinkle with the 3/4 cup cheese.

Step 11

Put pan back into the oven, and cook about 15 more minutes, or until cheese is melted down the sides of the meatloaf.

Step 12

When done, take out of oven and let sit for 5-10 minutes, then slice into 2" slices, and serve.

Top the meatloaf with the tzatziki sauce and mozzarella cheese, and bake for 45-50 minutes.

LouLouIzSpoiled

This was easy to whip up on a hot night and I baked it on the grill on indirect heat so I wouldn't heat the house up. I grilled baked potatoes and corn at the same time and we LOVED this meatloaf. It is packed full of Mexican flavors that we enjoy so much when we have Mexican. This is going on my regular meal rotation as a new favorite for us. Thanks!
