Step by Step Method
Step 1
Combine 1/2 cup sugar and cornstarch in the top of a double boiler. Slowly add scalded milk to beaten egg yolks; stir into sugar mixture.
Step 2
Cook and stir in top of double boiler over hot, but not boiling, water until custard coats spoon.
Step 3
Remove from heat and add vanilla to 1 cup of the custard.
Step 4
Add the chocolate chips and stir until melted.
Step 5
Pour this mixture into the bottom of the baked and cooled pie shell; chill.
Step 6
Meanwhile soften gelatin in cold water; add remaining hot custard; stir until dissolved. Chill until slightly thick.
Step 7
Beat egg whites until soft peaks form; beat in 1/2 cup sugar and continue beating until stiff peaks form. Fold in the custard gelatin mixture. Pile over chocolate layer; chill until set.
