Step by Step Method

Add water and wine in a pot

Boil water then add lentils.

Simmer and cover.check to see if they need more water

Green lentils take 30 minutes. Red lentils take 20 minutes.

Meanwhile in another skillet

Heat up skillet with 1 T oil.

Chop the onion, garlic saute

Add rest of vegetables, except tomatoes

Cook until just tender
Step 10
Add the vegetables in with the drained cooked lentils.

Sprinkle olive oil.

Add tomatoes.
Step 13
Add the salt and pepper.
Step 14
Cook for a few minutes.

Serve

And sprinkle the parsley over the dish.
