Step 1: Add water and wine in a pot
Step 2: Boil water then add lentils.
Step 3: Simmer and cover.check to see if they need more water
Step 4: Green lentils take 30 minutes. Red lentils take 20 minutes.
Step 5: Meanwhile in another skillet
Step 6: Heat up skillet with 1 T oil.
Step 7: Chop the onion, garlic saute
Step 8: Add rest of vegetables, except tomatoes
Step 9: Cook until just tender
Step 10: Add the vegetables in with the drained cooked lentils.
Step 11: Sprinkle olive oil.
Step 12: Add tomatoes.
Step 13: Add the salt and pepper.
Step 14: Cook for a few minutes.
Step 15: Serve
Step 16: And sprinkle the parsley over the dish.
