Ingredients

The ingredients are:
  • 7 ounces lentils (1 cup)
  • 2 1/2 cup water
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon oil
  • 1/2 teaspoon olive oil
  • 3 garlic cloves, smashed
  • 1 yellow onion, chopped
  • 1/2 cup red wine
  • 1 carrot, minced
  • 1 celery rib, sliced
  • 2 cups broccoli, chopped
  • 12 ounces tomatoes (2 tomatoes)
  • 2 tablespoons parsley

How to Make

  • Step 1: Add water and wine in a pot

  • Step 2: Boil water then add lentils.

  • Step 3: Simmer and cover.check to see if they need more water

  • Step 4: Green lentils take 30 minutes. Red lentils take 20 minutes.

  • Step 5: Meanwhile in another skillet

  • Step 6: Heat up skillet with 1 T oil.

  • Step 7: Chop the onion, garlic saute

  • Step 8: Add rest of vegetables, except tomatoes

  • Step 9: Cook until just tender

  • Step 10: Add the vegetables in with the drained cooked lentils.

  • Step 11: Sprinkle olive oil.

  • Step 12: Add tomatoes.

  • Step 13: Add the salt and pepper.

  • Step 14: Cook for a few minutes.

  • Step 15: Serve

  • Step 16: And sprinkle the parsley over the dish.
