Step by Step Method

Step 1

Preheat oven to 350° F.

Step 2

Pour flour and sugar in a mixing bowl. Add lemon zest and mix all together with a wire whisk.

Step 3

Add in water, eggs, oil, and poppy seeds and mix with wire whisk till well blended.

Step 4

Using a 1/2 cup measure, put batter in jumbo muffins tins that have been sprayed with non-stick cooking spray to fill 8 muffin cups to 2/3 full.

To make streusel topping:

Mix the flour, sugar and softened butter with a fork or pastry blender till crumbly. Sprinkle liberally on top of each muffin before baking.

Step 7

Place in preheated oven on center rack. Bake 25-30 minutes until a toothpick inserted in center of a muffin comes out clean, and tops are lightly browned.

Step 8

Let cool 10 minutes before removing to a cooling rack. Enjoy.
