Step by Step Method
Step 1
In a saucepan place lemon with enough water to cover and bring to a boil over high heat and boil for 30 minutes or until tender and lemon can be pieced with a fork. Drain the lemon and puree in a blender. Transfer to a large bowl. Stir in sugar, cover, and let stand at room temperature for 12 hours.
Step 2
Stir in the suet, and the rest of the ingredients (-mixed spice).
Step 3
Use right away or pack it into jars, capping tightly and refrigerate. It will keep for up to one year.
