Ingredients

The ingredients are:
  • 1 lemon
  • 225 grams sugar (1 cup plus 2 tablespoons)
  • 225 grams suet, shredded (1/2 pound or about 2 cups)
  • 225 grams currants, dried (1 1/3 cups)
  • 115 grams raisins (2/3 cup)
  • 2 tablespoons brandy
  • 2 tablespoons port
  • 1 tablespoon plus 1/4 teaspoon mixed spice (apple pie spice mixture)

How to Make

  • Step 1: In a saucepan place lemon with enough water to cover and bring to a boil over high heat and boil for 30 minutes or until tender and lemon can be pieced with a fork. Drain the lemon and puree in a blender. Transfer to a large bowl. Stir in sugar, cover, and let stand at room temperature for 12 hours.

  • Step 2: Stir in the suet, and the rest of the ingredients (-mixed spice).

  • Step 3: Use right away or pack it into jars, capping tightly and refrigerate. It will keep for up to one year.
