"This lemon bar recipe is best if made with meyer lemons, but you can make it with regular lemons as well, but it is by far the best with the meyer lemons, it still has the tartnes, but has sweetness and the perfect lemony flavor, also the lemon filling isn't as acidic with the meyer lemon"

Step by Step Method
Step 1
Grease a 9x13 baking dish with soft butter.
Step 2
Preheat oven to 350°F.
Step 3
For the crust--- cream the butter and sugar until light and fluffy.
Step 4
Combine the flour and salt, then with the mixer on low, slowly add to butter mix, beating just until combined, stopping to scrape the sides of the bowl a couple times.
Step 5
Form dough mix into an even layer in buttered baking dish bringing dough 1/2 inch up the sides of the dish. Place in the fridge for 30 min.
Step 6
After 30 minutes bake crust for 20-25 min. or until lightly golden. Remove from oven and set aside to cool.
Step 7
For the lemon filling--- combine egg yolks, sugar, zest and lemon juice in a saucepan, gently cook over medium heat, stirring constantly until the mixture evenly coats the back of a wooden spoon (12-15 min). Remove from heat. Add butter, just a couple pieces at a time, stirring until fully incorporated. Add salt to taste. Strain through a fine mesh sieve then pour lemon filling into finished crust.
Step 8
Place the pan into refrigerator until fully chilled (at least 3 hours.)
Step 9
Slice bars into desired squares or triangles (between each cut rinsing your knife with hot water and wipe clean).
