Step by Step Method

Step 1

Preheat oven to 375 degrees F. Set oven rack to lowest position. Prepare a large baking sheet to place under the pan to catch any spills.

Step 2

Grease a 10-inch round cake pan or round casserole dish.

Step 3

In a skillet cook the beef with garlic, onion and jalapeno pepper until no longer pink; drain fat then continue cooking stirring until the meat is lightly browned (this may take about 12-15 minutes to brown) .

Step 4

Mix in 1/2 a package of the taco seasoning mix; cook stirring for 2 minutes. Season with salt and pepper. If you want you can add in the remaining half of the seasoning.

TO ASSEMBLE


Step 5

Place one tortilla into the bottom of the pan. Spoon 1/3 of the jar of semi-drained salsa over the tortilla, then sprinkle 1/3 of the ground beef mixture over salsa.

Step 6

Using a teaspoon dollup 1/3 of the sour cream over the beef then spread out using a spoon (the sour cream doesn’t have to cover the beef completely and go easy on the sour cream you don’t need to much or it will be too rich).

Step 7

Sprinkle 1/3 of the chilies over the sour cream then 1/3 (1/2 cup) of the shredded cheese.

Step 8

Repeat two more times (for the last layer do not sprinkle the remaining 1/2 cup shredded cheese on top, you will add on after cooking).

Step 9

Cover with foil and bake for about 30 minutes; uncover and continue baking for another 20-25 minutes or until hot and heated all the way through.

Step 10

Sprinkle the remaining shredded cheese on top and return to oven for another 5-8 minutes to melt the cheese.

Step 11

After the cheese has melted sprinkle the top with chopped tomatoes and green onions.

Step 12

Slice into wedges then serve.

Good Lord is this every amazing, I made exactly as stated in the recipe except I didn't use the jalapeno because I didn't have any but I did use the green chilies, my partner loves Mexican food so I search this site for something different to make, I'm sure glad I found this one, it's already requested to make again, and when I make it again I'll be making two! You really need to try this recipe because it is really, really, REALLY good, thank you KittenCal!
