"Cook the shells only for about 5-6 minutes you do not want to cook them to the package directions or they will be too soft. The shells may be stuffed up to 2 days ahead covered then refrigerated until ready to bake. I use my own sauce to make these you can you you favorite however I do recommend using homemade it's always better! Step by Step Method

Step 1

Cook pasta shells for only about 5 minutes; drain, rinse under cold water; set aside on a plate, then cover with plastic wrap to prevent the pasta from drying out.

Step 2

In large skillet cook the ground beef with onion until browned (the meat must be browned this will take about 10-12 minutes); drain fat. Add in garlic; cook for 2 minutes. Remove from heat then stir in bread crumbs, set aside to cool. Blend in egg, 1/2 cup Parmesan cheese, nutmeg, salt and pepper.

Step 3

Pour/spread 2 cups pasta sauce into bottom greased 13 x 9-inch baking dish. Using a small spoon carefully fill each shell with meat filling. Place stuffed shells side by side filling side up into baking dish. Spoon remaining 2 cups of pasta sauce over shells.

Step 4

Sprinkle generously with 1/2 cup or more Parmesan cheese. Cover with foil and bake in a preheated 375 degrees F for 30 minutes. Remove sprinkle with mozzarella cheese, return to oven, bake uncovered for another 15-20 minutes or until hot an bubbly. Delicious!

I changed it up a little, adding Ricotta cheese with egg, garlic powder, onion powder, salt, pepper and chopped parsley and and meat filling into the shells, and I covered with Mexican and Parmesan cheese. So very delicious! We will have this again for sure. Thank you for sharing another of your fabulous recipes Carol! Linda

I feel like a master chef after making these shells. My boyfriend stuffed his face and loved them! I used your sauce http://www.recipezazz.com/recipe/sausage-tomato-sauce-lasagna-or-manicotti for the sauce. That was a great sauce and it tasted really good with the shells. I feel like an Italian chef now, and since I am just learning to cook that is a good feeling! Thank you.
