Step 1: Cook pasta shells for only about 5 minutes; drain, rinse under cold water; set aside on a plate, then cover with plastic wrap to prevent the pasta from drying out.
Step 2: In large skillet cook the ground beef with onion until browned (the meat must be browned this will take about 10-12 minutes); drain fat. Add in garlic; cook for 2 minutes. Remove from heat then stir in bread crumbs, set aside to cool. Blend in egg, 1/2 cup Parmesan cheese, nutmeg, salt and pepper.
Step 3: Pour/spread 2 cups pasta sauce into bottom greased 13 x 9-inch baking dish. Using a small spoon carefully fill each shell with meat filling. Place stuffed shells side by side filling side up into baking dish. Spoon remaining 2 cups of pasta sauce over shells.
Step 4: Sprinkle generously with 1/2 cup or more Parmesan cheese. Cover with foil and bake in a preheated 375 degrees F for 30 minutes. Remove sprinkle with mozzarella cheese, return to oven, bake uncovered for another 15-20 minutes or until hot an bubbly. Delicious!
