Step by Step Method

Step 1

Heat your oven to 375° Fahrenheit.

Step 2

You need a 15X10X1 inch pan. Line it with either waxed paper, foil, or parchment paper. If using the waxed paper or the foil, you will need to grease it well.

Step 3

Add the three eggs to a medium bowl and beat them with an electric mixer until thick and lemon colored- about 5 minutes. Don't try to hurry this step because it will help the cake hold together.

Step 4

Beat in the granulated sugar. On low speed, beat in the water and vanilla.

Step 5

Add the flour, baking powder, and salt. Beat just until the batter is smooth.

Step 6

Pour the batter into the pan, making sure you spread it to the corners.

Step 7

Put into the oven and bake for 12 to 15 minutes or until a toothpick inserted in the middle comes out clean.

Step 8

Immediately loosen the cake from the pan. Turn the pan upside down onto a towel that you have previously sprinkled with powdered sugar.

Step 9

Remove the paper or foil.

Step 10

If the edges of the cake are stiff, trim the edges off.

Step 11

While the cake is still hot, roll it up with the towel. Roll from the narrow end. Cool it on a cooling rack for 30 minutes.

Step 12

Unroll the cake, removing the towel. If needed, beat the jelly or jam with a fork to soften it. Spread the jelly over the top of the cake.

Step 13

Roll the cake up again. Sprinkle powdered sugar over the top.
