"A simple white bean soup kicked with some herbs and pepperoni"
Put beans in large bowl add enough water to cover beans. Soak beans overnight. Drain/rinse.
Place soaked beans in large stock pot, add water to cover the beans (if necessary add more water so there is at least an inch of water above the beans). Add the rest of the ingredients. Cook beans at a simmer for 90 minutes. If water gets too low add a little bit more. Server.
