Ingredients

The ingredients are:
  • 1 pound dry kidney beans (white)
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 1 yellow onion (chopped)
  • 1 teaspoon oregano
  • 1 can ( 15 ounce) diced tomatoes
  • 1 package ( 8 ounce) pepperoni, sliced
  • 6 cups water

How to Make

  • Step 1: Put beans in large bowl add enough water to cover beans. Soak beans overnight. Drain/rinse.

  • Step 2: Place soaked beans in large stock pot, add water to cover the beans (if necessary add more water so there is at least an inch of water above the beans). Add the rest of the ingredients. Cook beans at a simmer for 90 minutes. If water gets too low add a little bit more. Server.
