"I like a more taco flavored meat for my taco's, so I don't generally use this recipe. But that being said, this is the type of meat mixture you generally get at powwows. This does taste very good and is more authentic than what I usually use. Of course you can add more spices to make it spicier. This is just a recipe they normally serve the public, where you have to tone it down a bit for everyone! You can use hamburger for this, just use less olive oil, as bison meat is very lean, and you need the oil to help brown it. As for the gluten free part-just check your cans of beans to make sure they are GF."

Step by Step Method
Step 1
In a frying pan, or electric skillet heat olive oil until almost smoking. Add ground meat. Brown and break up meat. Cook about 5 minutes, until completely brown, stirring to prevent burning.
Step 2
Add chopped onion, bell pepper and garlic and cook another 3–4 minutes, until onion is soft. Add chopped tomatoes and cook another 3 minutes, stirring constantly to prevent burning. Add cooked pinto and kidney beans and stir. Add salt, 6 tablespoons of green chiles, and stir again. Cook 1 minute more, stirring to prevent burning. Remove from heat.
Step 3
Spoon mixture on top of freshly made fry bread, then top with lettuce, tomatoes, cheese, onions, avocados or your favorite taco toppings. Don't forget the taco sauce or salsa!
