Step 1: In a frying pan, or electric skillet heat olive oil until almost smoking. Add ground meat. Brown and break up meat. Cook about 5 minutes, until completely brown, stirring to prevent burning.
Step 2: Add chopped onion, bell pepper and garlic and cook another 3–4 minutes, until onion is soft. Add chopped tomatoes and cook another 3 minutes, stirring constantly to prevent burning. Add cooked pinto and kidney beans and stir. Add salt, 6 tablespoons of green chiles, and stir again. Cook 1 minute more, stirring to prevent burning. Remove from heat.
Step 3: Spoon mixture on top of freshly made fry bread, then top with lettuce, tomatoes, cheese, onions, avocados or your favorite taco toppings. Don't forget the taco sauce or salsa!
