"I found this recipe in an old tatered recipe book my mother had tucked away. The first time I tried this recipe, I was very unsure. I didn’t believe I would achieve the consistency it showed in the photo, but, it turned out great. It is a favourite here."

Step by Step Method

Step 1

Blend all ingredients in a blender for a few seconds, until well mixed

Step 2

Pour mixture into a 10 inch greased pie plate

Step 3

Bake at 350 degrees Fahrenheit for 1 hour or until centre tests firm

Step 4

Then flour will settle to form crust, the coconut forms the topping, the centre is an egg custard filling.

Yummy! almost like a soft baked coconut cookie at least that't the way mine turned out, I may try this next time with some added nuts, thanks QueenBea for a great east recipe!

My mom loves coconut cream pie so I tagged this recipe for her. I added everything but the coconut to my food processor and whizzed that until well blended. Added the coconut and pulsed a few times so there would be bigger pieces in the mixture. The pie baked up nicely and when we sliced it there was the crust, filling, and coconut topping. Very easy to make and it tastes great! Will make this again for my mom and also for family gatherings. Made and reviewed for the Recipebook Tag Game in the Game Forum.
