Step by Step Method

Step 1

Heat oil and saute onions and peppers, lightly season.

Step 2

Cook until lightly browned.

Step 3

Add garlic, tomato paste, chili powder and hominy.

Step 4

Cook a minute.

Step 5

Add rest of ingredients and simmer 20 minutes until thickened, stirring so it doesn't burn.

Step 6

Remove bay leaf.

Step 7

Season to taste.

Step 8

Garnish with parsley and serve with lemon.

Good stuff! It definitely has the flavor profile of "Veracruz". I did tweak a bit and used a green bell pepper because I had a half in the fridge, and used cilantro instead of parsley to keep with the Hispanic theme. Only made a half recipe, and it's enough to serve 4 with good sized servings. Will definitely make again! Thanks for sharing!
