Step by Step Method

Step 1

Place orange sections on a baking sheet in a single layer. Freeze until solid.

Step 2

In a blender, add coconut milk and half of the frozen orange sections. Blend until smooth. Add remaining sections and continue blending. Add sweetener of choice and vanilla extract. Blend again. pour into a freezer-safe 1/2-gallon container and freeze until solid.

Step 3

When ready to serve, remove from freezer and let sit at room temperature a few minutes to make scooping easier.

I lucked out and actually bought oranges that had flavor. This had a good orange and coconut flavor. It did not have an ice cream texture. Like the other review said, more like sherbet or Sorbet. I am thinking it would be good with crumbled graham crackers on top (after it melts a little bit). Thanks, Teresa for posting this.

Thank you for sharing this flavorful treat Teresa. It had a lovely light and subtle orange/coconut flavor that we enjoyed. It was very light and refreshing. Reminded us of a sorbet in texture. Made FYC tag game.
