Step 1: Place orange sections on a baking sheet in a single layer. Freeze until solid.
Step 2: In a blender, add coconut milk and half of the frozen orange sections. Blend until smooth. Add remaining sections and continue blending. Add sweetener of choice and vanilla extract. Blend again. pour into a freezer-safe 1/2-gallon container and freeze until solid.
Step 3: When ready to serve, remove from freezer and let sit at room temperature a few minutes to make scooping easier.
