"Becky Hardin at her blog site thecookierookiedotcom has become a favorite food blogger & this creative holiday leftover recipe that I modified slightly is at least a part of that status for me. This certainly has "meal appeal" as it can be breakfast, lunch or dinner fare. BUT as far as I know, few holiday leftover recipes work as well on a breakfast menu as this does. We see a lot of soups, sammies & main-dish casseroles, etc - But breakfast not so much. Surrounding this quesadilla breakfast w/coffee & fruit is certain to make your family eager for the mornings that follow holiday meals. ENJOY!"

Step 1

Spray a lrg skillet w/non-stick cooking spray & heat over med heat (Butter-flavored would be nice if available - Your option).

Step 2

Place the 1st tortilla in the bottom of the skillet & top with 1/2 cup cheese, 1 cup turkey, 1/4 cup cranberry sauce, 1/8 cup sage (See note on Ingredient List), another 1/2 cup cheese & the 2nd wrap. Grill for about 5 min on ea side or until cheese is melted & all ingredients are warmed.

Step 3

Take off the heat, cut into 4 wedge sections & keep warm while you repeat w/the other ingredients to make a 2nd quesadilla.
