Here's how you make Holiday Leftover Quesadillas

  • The following recipe serves 4 people.

Ingredients

The ingredients are:
  • 4 (280 grams) flour tortillas (may use whole wheat wraps, 10-inch wraps)
  • 250 grams cooked turkey (chopped, 2 cups turkey meat)
  • 1/2 cup cranberry sauce
  • 2 cup shredded cheese (A combo of cheddar, asiago & pepperjack was suggested. I'll use Gouda as I feel it compliments the ingredients.)
  • 1/4 cup fresh sage, chopped (*Note: Fresh sage will be hard to find here in Iceland, so I'll use dried sage rubbed between my fingers to sprinkle approx 2 tsp on ea quesadilla*)

How to Make

  • Step 1: Spray a lrg skillet w/non-stick cooking spray & heat over med heat (Butter-flavored would be nice if available - Your option).

  • Step 2: Place the 1st tortilla in the bottom of the skillet & top with 1/2 cup cheese, 1 cup turkey, 1/4 cup cranberry sauce, 1/8 cup sage (See note on Ingredient List), another 1/2 cup cheese & the 2nd wrap. Grill for about 5 min on ea side or until cheese is melted & all ingredients are warmed.

  • Step 3: Take off the heat, cut into 4 wedge sections & keep warm while you repeat w/the other ingredients to make a 2nd quesadilla.
