This was super easy to make. (I picked this recipe specifically for a night I knew would be hectic in my house, so something easy to make but filling was my goal. And the step of not browning the ground beef beforehand was a time-saving step that intrigued me.) Overall, the flavor of this casserole was great. But we had a big issue with the carrots and potatoes being too undercooked. Even after 60 minutes of baking, both were still crunchy and hard. I will make this recipe again, especially for busy nights when I don't have a lot of time for meal prep. But in the future, I'll use frozen or canned carrots (much softer), and I'll slice the potatoes very thinly instead of cutting into chunks, so they soften more with thorough cooking.
