Step by Step Method

Step 1

In large pot of heavily salted boiling water, cook potatoes until tender and drain.

Step 2

Cool to room temperature.

Step 3

In large bowl, combine Spam and potatoes.

Step 4

Add peas and carrots, pickles and onion.

Step 5

Season lightly, and gently toss.

Step 6

In separate bowl, stir together mayonnaise, pickle brine and mustard and season lightly.

Step 7

Gently stir into potato mixture and season to taste.

Step 8

Cover and refrigerate for several hours before serving.
