Step by Step Method

Step 1

Spray or grease a two quart casserole dish. Set it aside for now.

Step 2

Place a large skillet over medium high heat on the stove top. Place the hamburger, salt, pepper, and garlic in it and cook.

Step 3

When the hamburger is about halfway finished, add the onion, chopped celery, and red pepper flakes. Continue cooking until the hamburger is finished and the vegetables are starting to become translucent. Don't drain.

Step 4

In a medium bowl, pour in the beef broth and the cream of celery soup, mixing them together. Pour that mixture and the rice into the skillet and stir until everything is mixed well.

Step 5

Pour into the prepared casserole dish and cover it tightly with aluminum foil. Bake at 350 degrees Fahrenheit for 1 hour or until the rice is tender. Remove from the oven and keep it covered for 15 minutes before serving.

My mom made a casserole similar to this when I was growing up and this was definitely as good! I made exactly as directed; added the red pepper flakes and I think I would omit them the next time. My family enjoyed this and it smelled warm and homey as it baked. A great casserole for a cold and snowy day!

Simple comfort casserole which uses what is usually on hand -- I used ground turkey and chicken broth and also added some frozen vegetables but otherwise made as directed. Thanks for sharing!
