" I, fairly regularly, have an omelet for Sunday Brunch and sometimes during the week for dinner. This is one of my favorites. You will notice that I add some flour, cottage cheese and milk to the eggs I find that it give a nice consistency to the omelet. If you prefer just beat the eggs and add a bit of water. Serve it with or without the salsa. This is quite a large omelet. If you have smaller appetites it will serve two. You do not have to flip the omelet it comes out golden on the bottom using medium heat. On my electric stove I set the heat between 6 and 7."

Step by Step Method

Step 1

In a bowl beat together the eggs, milk, cottage cheese and flour. I whirl it to the count of 40 in my mini mixer.

Step 2

Over medium heat pour the eggs into a lightly oiled skillet Cover with a lid

Step 3

Cook for 3 minutes, add the ham and cheese. Spread it over the whole omelet

Step 4

Cover and cook for an additional 2 minutes. Fold it over and serve

Step 5

Add salsa on top if you are using it
