Step 1: In a bowl beat together the eggs, milk, cottage cheese and flour. I whirl it to the count of 40 in my mini mixer.
Step 2: Over medium heat pour the eggs into a lightly oiled skillet Cover with a lid
Step 3: Cook for 3 minutes, add the ham and cheese. Spread it over the whole omelet
Step 4: Cover and cook for an additional 2 minutes. Fold it over and serve
Step 5: Add salsa on top if you are using it
