Dissolve yeast in warm water.
Add sugar, salt, oil and 3 cups four, mix well.
Add enough remaining dough to make dough easy to handle.
Turn out dough into lightly floured, surface and divide into 4 equal portions
Knead the colours into each dough portion, working with one colour at a time. Kneed each portion till the colour is fully combined and the dough is smooth and elastic.
Place each potion in its own oiled bowl and turn to coat.
Cover dough with a damp cloth, and let dough rise until doubled.
Punch down each portion and divide in half. Set one half aside
Roll out the dough into four large (30x15cm or 12x6inch) rectangles one at a time.
Stack the 4 portions of rolled out dough on top of each other, pressing them together to remove air pockets. You can brush each layer lightly with water so that they stay sealed together if you like.
Press down ends of roll to seal, and tuck ends under roll.
Place roll in greased loaf pan, seam side down and cover with damp cloth. Repeat with remaining dough.
Let rise 1 hr, or until doubled.
Heat oven to 400F and bake approx 35 minute Loaves should be golden brown (unless you have the black dough on top) and sound hollow when tapped.
