"These sweet potatoes are perfect to have with just about any meat on or off the grill. They are delicious and good for you too! I love the sweet from the potatoes and the tart from the lemon/lime. If you are a cilantro lover, use it. If not, then leave it out!"

Step by Step Method

Step 1

Prepare your grill for hot, direct heat to 500-650 degrees F .

Step 2

While the grill is heating up, peel the sweet potatoes and slice lengthwise, or on a diagonal, into slices about 1/4 inch thick.

Step 3

Coat the sweet potato slices with olive oil, and sprinkle with salt. Set aside.

Step 4

Combine all the dressing ingredients in a small bowl. Stir with a fork to blend ingredients. Set aside.

Step 5

Once the grill is hot, lay the sweet potato pieces down on the grill. Bring down the cover on the grill, and grill until each side gets some grill marks, between 3-5 minutes for each side, depending on how hot the grill is.

Step 6

When done, toss the sweet potatoes in a bowl with the dressing, and serve hot.
