"There are lots of recipes for Green Chile Stew, but I like this one because it uses a mix of chiles - so great way to use whats on hand -- roast the chiles, stem and seed them and you are half done."

Step by Step Method
Step 1
In a pot over medium heat heat the oil and add the pork and spices until it is medium brown. Remove meat from pot; reserving drippings.
Step 2
In a separate skillet cook the potatoes with oil; until golden brown; remove from heat.
Step 3
In a large pot add the chiles, meat, potatoes, tomatoes and water to cover.
Step 4
In the meat pan add flour to the drippings and create a medium brown roux; add water and add to pot with the chiles and meat; stirring well over medium heat adding more water if needed and spices to taste. Cover and simmer until ready to serve.
