Ingredients

The ingredients are:
  • 2 pounds chiles (use a mix of chiles - green chiles, jalalpenos and whatever chiles you have on hand and how much heat you like, roasted, stemmed, peeled, seeded and diced)
  • 2 pounds pork (cut into 1/4 inch pieces)
  • 1 1/2 pounds potatoes (4 potatoes, peeled and diced)
  • 1 can (28 ounce) tomatoes, diced
  • Salt
  • Pepper
  • Garlic salt
  • Oregano
  • 2 tablespoons oil (vegetable oil)
  • 2 tablespoons all-purpose flour

How to Make

  • Step 1: In a pot over medium heat heat the oil and add the pork and spices until it is medium brown. Remove meat from pot; reserving drippings.

  • Step 2: In a separate skillet cook the potatoes with oil; until golden brown; remove from heat.

  • Step 3: In a large pot add the chiles, meat, potatoes, tomatoes and water to cover.

  • Step 4: In the meat pan add flour to the drippings and create a medium brown roux; add water and add to pot with the chiles and meat; stirring well over medium heat adding more water if needed and spices to taste. Cover and simmer until ready to serve.
