Step 1

In a microwave safe bowl, microwave spinach for 45 seconds or until wilted. Pat dry. Add all remaining ingredients except for bread and butter and mix together.

Step 2

Spread mixture onto one bread slice. Top with remaining bread slice. Spread the top of he sandwich with 1 teaspoon butter.

Step 3

Bringa skillet sprayed with nonstick spray to medium heat and add sandwich, buttered side down.

Step 4

Spread the top with remaining 1 teaspoon butter. Cook until bead is golden brown and cheese is hot (2 minutes per side), flipping carefully.

We enjoyed this different but yet tasty version of grilled cheese. Really liked the concept of adding spinach, but though we like ricotta and feta not too sure on both of them together in a grilled cheese, but no leftovers, so we enjoyed it.
