Ingredients

The ingredients are:
  • 1 cup spinach, chopped
  • 3 tablespoons low-fat ricotta cheese
  • 2 tablespoon feta cheese (fat-free and crumbled)
  • 2 tablespoons sun-dried tomatoes (not marinated, but the dry bagged type, chopped)
  • 1 tablespoon sliced kalamata olives
  • 1/2 teaspoon garlic powder
  • 2 slices (2 ounces) whole grain bread
  • 2 teaspoons whipped butter (light, or spread)

How to Make

  • Step 1: In a microwave safe bowl, microwave spinach for 45 seconds or until wilted. Pat dry. Add all remaining ingredients except for bread and butter and mix together.

  • Step 2: Spread mixture onto one bread slice. Top with remaining bread slice. Spread the top of he sandwich with 1 teaspoon butter.

  • Step 3: Bringa skillet sprayed with nonstick spray to medium heat and add sandwich, buttered side down.

  • Step 4: Spread the top with remaining 1 teaspoon butter. Cook until bead is golden brown and cheese is hot (2 minutes per side), flipping carefully.
