"These cookies were always in a cookie tin on my husband's Grandma Kirkpatrick's pantry shelf. They are simple, crisp and delicious. As they are "slice and bake" the cooking time includes over night refrigeration. Individual rolls may also be stored in the freezer to be baked when unexpected company comes or when you want something sweet with afternoon tea. "

Step by Step Method

Step 1

In a mixing bowl cream butter and sugars. Add eggs and vanilla; beat until well blended.

Step 2

Mix in flour and baking soda. Fold in walnuts.

Step 3

Divide dough into four equal portions. Form each portion into a 1-1/2 inch by 12 inch log.

Step 4

Wrap each log in waxed paper. Refrigerate over night. (May be frozen. To freeze, wrap each log in additional freezer paper or place in plastic storage bags. I've frozen them for up to one month.)

Step 5

Preheat oven to 375F (190C or gas mark 5).

Step 6

Using a thin, sharp knife, cut cookies in 1/4 inch thick rounds. Place on ungreased cookie sheets. Bake for 10-12 minutes, until lightly browned. Remove from baking sheet and cook on rack.

Step 7

To bake from frozen state, remove cookie dough from freezer. Allow to thaw slightly on counter. Cut into rounds and bake as directed above.
