Step by Step Method

Step 1

Preheat the oven to 350 degrees.

Step 2

Mix the first five ingredients together in a bowl.

Step 3

In a different large bowl, beat sugar and butter with a mixer until fluffy.

Step 4

Add eggs and beat well.

Step 5

Add the milk and dry ingredients into the sugar mixture, stirring well.

Step 6

Stir in the lemon juice and the raisins.

Step 7

Pour into a greased and floured 9 x 5 inch pan.

Step 8

Bake 55 to 60 minutes, until a toothpick comes out clean when tested.

Step 9

Cool for ten minutes, then take out of the pan.

This is a very delicate bread. We too found it a wee bit crumbly but as I love quick breads toasted, that is how I have been eating it. Used dark raisins which I plumped up in warm water then drained, dried and tossed with some of the measured flour before continuing with the recipe. We are enjoying this loaf! Thank you for sharing! Good sweet bread which we enjoyed. It is a bit crumbly and sweet. We used multi-colored raisins which may have made the bread sweeter than usual. Thanks for sharing!
