Step by Step Method

Step 1

Preheat oven to 400F. Coat a 12-cup muffin tin with non-stick cooking spray or line with paper liners.

Step 2

Combine dry ingredients (flour through brown sugar) in a mixer bowl.

Step 3

Combine remaining ingredients in a bowl; mix well.

Step 4

Add to flour mixture and mix until just blended.

Step 5

Fill muffin cups half full.

Step 6

Bake 18-20 minutes, or until muffins are firm in the center.

Step 7

Cool slightly on a wire rack. Serve warm.

I did make a few changes to this recipe, first using 1 to 1 gluten free baking flour in lieu of the regular flour and gluten free oat bran hot cereal flakes. I omitted the molasses as I couldn't find any in the grocery stores (Probably because of the Xmas baking season). I doubled the amount of brown sugar to make up for the lack of molasses. I kept my fingers crossed that this would work and , yes, they turned out delicious!!

Very good -- tastes just like molasses cookies. Next time I may add raisins but they are very good just as they are. Instead of the oat bran I used oatmeal but otherwise made as directed. I made 10 muffins for this recipe -- perfect -- 4 for us and 6 for the freezer for another day! Thanks for sharing!
