"I remember having these at Christmas when I was only little. I am not sure which member of the family used to make this for Christmas, but I remember really liking them, even though I hated mince tarts. I found this recipe from a supermarket I.G.A. and even though I do not have the original childhood recipe, I really would like to try these."

Step by Step Method
Step 1
Preheat the oven to 200°C (180°C fan-forced) & grease a 3cm deep 17 x 28cm baking tray and line with baking paper.
Step 2
Combine all the filling ingredients in a medium saucepan& heat over high heat, stirring occasionally for 5-7 mins until sugar has melted and mixture is almost boiling; remove from the heat and leave to cool.
Step 3
Place the butter, sugar, flour, egg, vanilla and honey in food processor and process until a thick dough forms.
Step 4
Lightly flour a large chopping board or bench top and knead dough until smooth, cut the dough in half, roll out one piece and press into the prepared tray.
Step 5
Spread the fruit mince filling over base.
Step 6
Roll out the remaining dough and place over filling, trimming to size; prick the with a fork 20 times.
Step 7
Bake slice for 10 mins, then reduce temperature to 180°C (160°C fan-forced) and cook for a further 20 mins or until golden.
Step 8
Cool completely, dust with icing sugar and cut into slices.
