Ingredients

The ingredients are:
  • 170 grams butter
  • 1/2 cup caster sugar
  • 1 egg
  • 1/2 teaspoon vanilla essence (extract)
  • 1 tablespoon honey
  • 1 cup self raising flour
  • 1 1/2 cups plain flour
  • Icing sugar, to serve
  • Filling Ingredients
  • 2 1/2 cups mixed dried fruit
  • 1/4 cup sweet sherry (or orange juice)
  • 1/4 cup brown sugar
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg

How to Make

  • Step 1: Preheat the oven to 200°C (180°C fan-forced) & grease a 3cm deep 17 x 28cm baking tray and line with baking paper.

  • Step 2: Combine all the filling ingredients in a medium saucepan& heat over high heat, stirring occasionally for 5-7 mins until sugar has melted and mixture is almost boiling; remove from the heat and leave to cool.

  • Step 3: Place the butter, sugar, flour, egg, vanilla and honey in food processor and process until a thick dough forms.

  • Step 4: Lightly flour a large chopping board or bench top and knead dough until smooth, cut the dough in half, roll out one piece and press into the prepared tray.

  • Step 5: Spread the fruit mince filling over base.

  • Step 6: Roll out the remaining dough and place over filling, trimming to size; prick the with a fork 20 times.

  • Step 7: Bake slice for 10 mins, then reduce temperature to 180°C (160°C fan-forced) and cook for a further 20 mins or until golden.

  • Step 8: Cool completely, dust with icing sugar and cut into slices.
