Step by Step Method
Step 1
Combine the garlic, olive oil, rosemary, salt, and pepper. Marinate the tuna in the mixture for 1 hour.
Step 2
Grill tuna over medium-hot coals for about 5 minutes on each side. Can also cook in a hot grill stove-top skillet or regular skillet in which olive oil has been added, cooking for 4-5 minutes on each side until golden. Be careful to not overcook the fish to prevent it from becoming dry. (the cooking time noted has everything to do with the thickness of the fish, so keep a watchful eye).
Step 3
Spoon salsa over fish and serve. Squeeze lemon juice to taste over each piece of fish.
Southern Sicilian Salsa
Step 4
Heat olive oil in a saucepan over medium-high heat. Add onion, pepper, and garlic.
Step 5
Cook 5 minutes, until the onion is soft, stirring often. Remove from heat.
Step 6
Place in a mixing bowl and add the remaining ingredients. Season to taste.
