"Besides being a reduced fat cold treat these are crazy yummy! I've made these with blueberries and raspberries, the flavor possibilities are endless! Next time I make these I'm going to make them with fat-free cream, if there good I'll update this recipe, this makes 6 medium popsickles "

Step by Step Method

Step 1

In a small saucepan over medium heat cook fruit and 1 tablespoon of water or fruit juice for 10 minutes or until they are easily broken up with a wooden spoon.

Step 2

Transfer mixture to a food processor (or strong blender) and puree till there are no lumps left. Refrigerate fruit puree until cool, about 30 minutes.

Step 3

In food processor, puree cream cheese, milk, vanilla extract and powdered sugar until smooth.

Step 4

In popsicle molds, layer fruit puree and cream cheese mixture. Insert popsicle sticks and freeze until firm (this should take roughly 3 hours depending on the temperature of your freezer).
