"Friends that were recently in New Orleans gave me this recipe credited to "Cajun Tours". They said these beignets were delicious. I have not made them but if my friends said they are good then they are! This is not dieters food. The recipe mkes 2-3 dozen"

Step by Step Method
Step 1
Put 1 1/2 cups warm water in a large bowl, sprinkle in the yeast, stir well to dissolve the yeast. When the yeast is dissolved and frothing add sugar, salt and milk.
Step 2
Beat the two eggs and add to the bowl, stir.
Step 3
Add Crisco, break it up.
Step 4
Stir well slowly add the flour about 1/3 cup at a time.
Step 5
Stir until the flour is well mixed and the dough is a big ball, cover with plastic wrap and place in the fridge overnight.
Step 6
Next day roll pieces of dough very thin about 1/8" into 2 inch squares.
Step 7
Do not reroll any small pieces of dough left after cutting the squares just fry those as they are, if you reroll they will be tough.
Step 8
Fry in oil 360 degrees for about 3 minutes or until they are light brown.
Step 9
Shake the cooked beignet into a bag with confectioner's sugar C'est Bon!
