Step by Step Method
Step 1
Preheat oven to 400 degrees F.
Step 2
To prepare the fish: combine cornmeal and flour in a shallow dish (I use a pie pan). Combine water and next four ingredients (water - egg) in second pie dish, stirring with whisk to combine. Dip one fillet in egg mixture and then in flour mixture. Place fillet on baking pan which has been coated with cooking spray. Repeat for remaining fish.
Step 3
Bake at 400 degrees for 20-30 minutes, turning once, or until fish is done and flakes easily with fork -- time depends on thickness of fish.
Step 4
To prepare the sauce: combine mayonnaise and the rest of the sauce ingredients (mayo - lemon rind).
Step 5
Spread 3 tablespoons of sauce on bottom half of hamburger bun, top with 1/2 cup lettuce and 1 fillet of fish; cover with top half of the bun. Repeat for all the sandwiches.
