"For this recipe I use my User Friendly Omelet For One http://www.recipezazz.com/recipe/user-friendly-omelet-for-one-2311. However I know that many do not like the bit of flour that I use so I will print this recipe as it was stated. For the semi-dried tomato I found some Turkish Gourmet Sundried Tomatoes, soft but not in oil. They were perfect. The recipe is from the BBC Good Food. This omelette is good served with mixed greens"

Step by Step Method
Step 1
Heat oil in a small fry pan, medium heat, add eggs, cover.
Step 2
When the omelette is almost cooked, apprx 3 minutes, add chopped tomatoes and feta cheese.
Step 3
Cover and continue cooking for apprx 2 more minutes.
Step 4
Flip the omelette in half, flip into quarters and slide onto a warm plate.
Step 5
Season with salt and pepper, enjoy
