Step 1: Heat oil in a small fry pan, medium heat, add eggs, cover.
Step 2: When the omelette is almost cooked, apprx 3 minutes, add chopped tomatoes and feta cheese.
Step 3: Cover and continue cooking for apprx 2 more minutes.
Step 4: Flip the omelette in half, flip into quarters and slide onto a warm plate.
Step 5: Season with salt and pepper, enjoy
