"The original recipe is from my 1952 Watkins cookbook, but I've made some changes to it to suit our taste and also to update it. Meatloaf might not be fancy, and it might not be pretty, but it's the ultimate comfort food. This is really good sliced thin and made into sandwiches the next day topped with mayonnaise, ketchup (or chili sauce), and cheese."

Step by Step Method

Step 1

Place bread in a food processor or small chopper and pulse to form 3/4 cup bread crumbs.

Step 2

Combine bread crumbs, seasonings and beef stock in a bowl; mix well and let stand until liquid is mostly absorbed, then beat to a smooth pulp.

Step 3

In a large bowl, combine bread crumb mixture with eggs, meats and onion and mix until well-blended (you may need to use your hands).

Step 4

Smooth mixture into a greased 9x5-inch loaf pan and level top.

Step 5

Bake at 350F for 45 minutes; drain excess liquid, then spread ketchup over top and bake an additional 15 minutes.

Step 6

Let stand 5-10 minutes before slicing and serving.

I didn't want to leave a bad review but I think something is wrong with the recipe- I made this exactly as written and the meatloaf came out much too wet. I used ground chuck so maybe the meat was too fatty? I think 1 cup of beef broth was too much.
