Step by Step Method

Step 1

Heat oil in a large skillet.

Step 2

Rinse and pat dry chicken. Add to hot oil in pan.

Step 3

Sprinkle with oregano and sea salt. Brown each side and add more oregano after turning.

Step 4

Turn heat down low and cook chicken for about 5 minutes.

Step 5

Slice peppers, turn up heat a little and add to pan. Stir fry in pan until still somewhat crisp, about 10 minutes.

Step 6

While chicken cooks, prepare orzo according to package directions.

Step 7

Mix up yogurt, dill, salt and 1 tablespoon lemon juice in a small container.

Step 8

Drain orzo, sprinkle with lemon juice and add extra salt and pepper if desired.

Step 9

To serve, plate chicken, peppers, and orzo. Pass the tzatziki sauce and olives.

Tips


  • Store bought Tzatziki sauce can be used instead of making your own.

This made for a fun, easy, and yummy meal. I skipped the orzo this time since we had just finished up a huge orzo salad the week before. I cooked everything else as stated and the result was tasty chicken tenders which worked well with the red peppers, sauce, and olives. We loved it!
