Step by Step Method

Step 1

Chop egg whites and reserve.

Step 2

Mash the yolks with a fork and stir in sour cream , mayonnaise and mustard.

Step 3

Add chopped egg whites and scallions and season with salt and pepper.

Arrange watercress on 4 bread slices.

Step 5

Top with the egg salad and cover with the remaining bread slices.

Wonderful sandwiches! I really loved the egg salad - the abundance of scallions really ups the game! Sprouts Market didn't have watercress, so I used arugula. Regardless, we loved these sandwiches. Next time, though, I'll trim the crusts before making the sandwiches. Thanks for sharing!
