The ingredients are:
  • 8 eggs, hard-boiled
  • 1/4 ounce sour cream,(3 tablespoons)
  • 1 tablespoon mayonnaise
  • 1 tablespoon grainy mustard
  • 4 scallions, trimmed, chopped
  • 1/32 teaspoon salt
  • 1/32 teaspoon freshly ground pepper, to taste
  • ¾ cup watercress,washed, stemmed
  • 8 ounces pumpernickel bread, (8 slices)

How to Make

  • Step 1: Chop egg whites and reserve.

  • Step 2: Mash the yolks with a fork and stir in sour cream , mayonnaise and mustard.

  • Step 3: Add chopped egg whites and scallions and season with salt and pepper.

  • Step 4: Arrange watercress on 4 bread slices.

  • Step 5: Top with the egg salad and cover with the remaining bread slices.

  • Step 6: Cut into 1/4 ths
